We are currently looking for a Head Butcher to join our team in London, ON.

 

 

Responsibilities & Duties:

·       Cut, trim, bone, tie and prepare various cuts of beef, pork, lamb, poultry, fish and seafood according to company specifications and customer requirements.

·       Prepare retail portions of meat, fish and seafood products while maximizing product yield and minimizing waste.

·       Prepare specialty meat products, marinated meats and custom orders for retail sale.

·       Inspect the quality, freshness and appearance of meat, fish and seafood products, monitor expiry dates, and ensure proper product rotation.

·       Operate, clean and maintain meat processing equipment, including band saws, grinders, slicers and other cutting equipment, ensuring safe operation at all times.

·       Ensure proper storage, labeling, pricing and merchandising of meat, fish and seafood products in accordance with company standards and applicable food safety regulations.

·       Monitor inventory levels of meat, fish and seafood products, assist with ordering, and maintain adequate stock while minimizing product loss.

·       Train and provide guidance to junior butchers and meat cutters on proper cutting techniques, equipment operation, sanitation procedures and product quality standards.

·       Prepare customized cuts and provide professional recommendations to customers regarding meat, fish and seafood selection and preparation methods.

·       Maintain a clean, organized and sanitary work environment and ensure compliance with CFIA food safety requirements, HACCP principles, and occupational health and safety regulations.

·       Receive, inspect and store meat, fish and seafood products in accordance with company standards and inventory control procedures.

·       Perform other related duties as assigned by management.

 

 

Experience:

·       A minimum of one year of recent experience as a butcher or meat cutter in a retail, wholesale or meat processing environment is required.

·       Demonstrated experience in cutting, trimming, boning and preparing various cuts of beef, pork, lamb, poultry, fish and seafood is required.

·       Experience operating meat processing equipment, including band saws, grinders and slicers, is required.

·       Knowledge of food safety, sanitation procedures and occupational health and safety regulations is required.

·       Experience in inventory control, product quality inspection and stock rotation is considered an asset.

·       Experience training or mentoring junior meat cutters is considered an asset.

·       Ability to work independently in a fast-paced environment with strong attention to detail.

 

 

Education:

Completion of secondary school is required.

English

 

 

Salary:

$36 per hour, 36 hours per week

 

 

Overtime:

1.5 times the wages after 44 hours per week
