Responsibilities/Tasks
Estimate amount and costs of supplies, food items and labour;
Maintain records of food costs, consumption, sales and inventory
Analyze operating costs and other data
Demonstrate new cooking techniques and new equipment to staff
Supervise activities of specialist chefs, chefs, cooks and other kitchen workers
Create new recipes
Instruct cooks in preparation, cooking, garnishing and presentation of food
Prepare and cook complete meals and specialty foods for events such as banquets
Prepare and cook meals or specialty foods
Requisition food and kitchen supplies
Arrange for equipment purchases and repairs
Prepare dishes for customers with food allergies or intolerances
Plan menus and ensure food meets quality standards
Oversee the preparation of authentic Japanese dishes, including advanced authentic knife skills for sushi and sashimi.
Design seasonal Japanese menus, coordinating traditional food presentations(Moritsuke);
Manage quality control for specialized Japanese ingredients and implementing strict food safety standards for handling raw seafood.
Train and supervise current chefs and cooks in traditional Japanese culinary techniques, including dashi (broth) and house-made sauce preparation.
