Job Title: Sushi Chef
Location: 1921 Quadra St., Victoria, BC, Canada V8T4C1
Wage: $26.92 per hour
Hours: 40 hours per week
Term: Full-time, Permanent
Language: English
Vacation: 4% Vacation pay (or 10 days) per year
Responsibilities:
– Prepare sushi rice, fish, and other ingredients according to established recipes and quality standards
– Expertly cut, fillet, and portion fish
– Assemble sushi, sashimi, nigiri, maki rolls, and specialty items with precision and artistic presentation
– Ensure consistency in taste, texture, and appearance across all menu items
– Develop and refine new sushi creations
– Maintain strict hygiene and sanitation standards at all times
– Clean and sanitize knives, cutting boards, and workstations throughout the shift
– Follow all food‑safety regulations and internal policies
– Monitor ingredient freshness and discard items that do not meet quality standards
– Track inventory levels of fish, produce, and dry goods
– Receive, inspect, and properly store seafood and other perishable items
– Ensure all equipment is functioning properly and report maintenance needs promptly
– Work closely with cooks and other kitchen staff to ensure smooth service and timely dish execution
– Train junior staff or sushi apprentices on proper techniques and safety procedures
Requirements:
– Completion of secondary school
– Minimum 3 years of experience in commercial food preparation, including experience in a Japanese culinary role specializing in sushi preparation
Key Assets:
– Proven expertise in sushi preparation and traditional Japanese knife techniques
– Strong knowledge of food‑safety regulations and proper handling of raw seafood
– Ability to perform efficiently in a fast‑paced kitchen while maintaining a high level of accuracy and attention to detail
